The Amish are often viewed as a remnant who represent the resistance against Big Education, Big Pharma, Big Food and Big Tech. Even their livelihoods, however, are under attack. Freedom to “opt out” is rarely granted in modern times, especially for those holding true to their traditions, their values, their practices and beliefs.
